Watermelon and feta salad

Here’s a refreshing and easy Watermelon and Feta Salad recipe that’s perfect for hot days or as a light side dish:


Ingredients

  • 4 cups watermelon, cubed or balled (seedless, chilled)

  • 1 cup feta cheese, crumbled or cubed

  • 1/4 cup fresh mint leaves, chopped or torn

  • 2 tbsp extra virgin olive oil

  • 1 tbsp balsamic glaze or reduction (optional)

  • Freshly ground black pepper, to taste

  • Optional: 1/4 red onion, thinly sliced (soaked in water to mellow flavor)

Instructions

  1. Prepare the watermelon

    • Cut watermelon into bite-sized cubes or use a melon baller. Chill if not already cold.

  2. Combine ingredients

    • In a large bowl, gently toss together watermelon, feta cheese, mint leaves, and red onion (if using).

  3. Dress the salad

    • Drizzle with olive oil and balsamic glaze, if using.

    • Season with freshly ground black pepper to taste.

  4. Serve immediately

    • Best served chilled. Garnish with extra mint or a little lime zest if desired.
